ok so last night I made THE BEST DINNER! artichoke heart stuffed chicken, cheesy rice, dank salad, and microwaved snap pea casserole.
Artichoke-stuffed Chicken Breast
6 4 oz chicken breasts
1 Clove garlic
1 1/2 c Frozen or canned artichoke hearts, rinsed and drained
1 Egg yolk
2 T Heavy cream
1 c Fresh bread crumbs
Dash nutmeg
1/3 c Chopped fresh parsley, divided
1/4 c Chicken broth
Paprika
Heat the oven to 425 degrees. Grease a baking pan.
Salt and pepper the chicken breasts. With a very sharp small knife, cut a pocket horizontally into each breast. Do not cut in half. Set aside while you make the stuffing.
In a food processor, place the garlic, artichoke hearts, egg yolk, cream, bread crumbs, nutmeg and about 1/4 cup of parsley. Process to mix, but do not puree.
Place 2 to 3 tablespoons of stuffing in each breast pocket. Do not close the pocket-the stuffing will puff up and out a bit.
Place the stuffed breasts in the baking dish. Pour the chicken broth over the chicken. Sprinkle with paprika. Bake 12 to 15 minutes. Place the breasts on a platter, spoon the pan juices over and sprinkle with reserved 2 tablespoons parsley.
I pretty much followed the recipe one this one.
INGREDIENTS
- 1 (15 ounce) can baby peas, drained
- 1 (2 ounce) bottle diced pimento peppers, drained
- 1 (5 ounce) can sliced water chestnuts, drained
- 1 (10.75 ounce) can condensed cream of celery soup
- 1/2 cup chopped onion
- 1/2 cup shredded Cheddar cheese
- 2 cups crushed buttery round crackers
- 1/2 cup margarine, melted
DIRECTIONS
- Preheat the oven to 375 degrees F (190 degrees C).
- In a medium bowl, mix together the peas, pimentos, water chestnuts, cream of celery soup and onion. Pour into a 1 1/2 quart casserole dish. Top with shredded cheese. In a separate bowl, mix together the cracker crumbs and margarine; sprinkle evenly over the cheese.
- Bake for 30 to 40 minutes in the preheated oven, until browned and bubbly.
But I cooked it in the Microwave..sweet meat!
And this is the wine we drank a little to quickly!

it snowed six inches here in Oregon. oh and by the way I lasted 3 and a half days on the stupid cabbage soup detox diet....I fucking hate cabbage..... here are some pictures of our snow:
I am having extreme cabin fever right now. I am making my mom her second birthday dinner in 3 days......and I need a glass of wine. in other news my dads cows are starting to calf. here is a picture of Zenya loving her new pet named after her great grandpa- arnie.

Cabbage-soup cleanse aficionado Jamie Pressly looks great but is her preferred method a safe way to drop weight?
The Cabbage Soup Recipe.
2 onions diced
Spray olive oil
One head of green cabbage shredded
16 ounce can diced tomatoes
2 green peppers diced
4 stalks of celery chopped
2 cups broth (vegetable, chicken or beef)
2 cups vegetable juice
5 carrots chopped
½ pound green beans
fresh herbs like thyme, basil, rosemary to taste
balsamic vinegar to taste
salt and pepper to taste
In a stock pot spray with a little olive oil.
Heat stock pot and then sautee onions until almost clear.
Add cabbage, canned tomatoes green peppers, celery, broth, vegetable juice and green beans.
Heat to a boil. Add vinegar, herbs, salt and pepper to taste.
The Plan.
The soup above can be eaten as much as you want on all of the days of the Cabbage Soup Detox Plan.
No bread, carbonated beverages, or alcohol.
Drink plenty of water.
Here is what else you can eat each of the seven days on the diet:
Day one: Unlimited fruit except no bananas.
Day two: Unlimited fruit except no bananas, plus vegetables raw or cooked. One baked potato with a smidgen of butter.
Day three: Unlimited fruits and vegetables raw or cooked. No baked potato.
Day four: Up to six bananas and unlimited skim milk.
Day five: Ten to twenty ounces of low fat protein (beef, or chicken). Unlimited vegetables.
Day six: Unlimited low fat protein (beef or chicken).
Day seven: Brown rice, unsweetened fruit juice and vegetables.
Cons of the Cabbage Soup Diet.
This diet is not a long-term diet and will probably not result in long-term weight loss.
On some days the diet is very low in protein and that can be a problem for some people.
Eating the soup several times a day for a week can get boring.
This diet is very low in fat, probably a little too low.
Pros of the Cabbage Soup Diet.
This diet is high in vegetables and fiber. This is very cleansing and detoxifying to the digestive system.
This diet is high in antioxidants.
It is a good alternative to some other cleansing or detox diets out there.
There is plenty to eat on this plan and it is not as boring as a liquid fast or detox.
Helpful tips.
If you do not do well without protein, add half a pound boiled, shredded chicken breast to the soup.
Take omega three, primrose oil and flax oil supplements every day you are on this diet. Take 7,000 mg of oil supplements or more daily.
To keep from getting bored with this diet, make smaller batches of the soup and change it up with red cabbage instead of green cabbage, parsnips instead of carrots, asparagus instead of green beans, and different mixes of fresh herbs.
Do not do this diet more than four times a year or more than once every three months. It is not a long-term solution to weight loss.
Use as much organic produce as possible.

All I want to do is take a shower with out my daughter waking up and stripping down and jumping in with me. I have no privacy.... I take a piss and get a standing ovation outside the door..... you know how hard it is to take a nice shit with little hands poking under the door at you?

its monday again
I started my classes today. Writing 122 online and geology144 in class at the sanitam Chemeketa. these will keep me pretty busy but I might post some of my papers for amusement.
